Citrus Sheet Pan Chicken and Roasted Veggies

Easy. Healthy. Delicious.

That was my intention when creating this recipe. I’ve been doing sheet pan dinners for years. It helps me eat my veggies, and experiment with flavors. I got the idea to add citrus because during the holidays I always make citrus and herb butter to put on everything (recipe coming later) so I knew these flavors would work well with this dish. You can adapt this recipe to almost any flavor. I’ve used curry powder instead of citrus. Marinated the chicken in soy sauce and brown sugar. You could roast red peppers and add cumin for a Southwestern-inspired meal! No matter what you decide this meal is healthy and tasty and sure to be a hit. Click the photo for the recipe card!
